late-night quesadillas:

time of ingestion last night: 11:00pm.

weak.

quesadillas: not so weak.

usually in my quesadillas i just use whatever we've got in the fridge on that particular day. yesterday: bell peppers, mushrooms, chicken and marble cheese.



you can really use anything you've got, ie green onions, tomatoes etc. sometimes if we're short on vegetables i just toss the chicken in bbq sauce and shred cheese over it and it's still pretty awesome.


then, of course, cook the chicken (i cut it into small pieces before i cook it, but you could always cook it and then cut it) and chop the vegetables.












then, pile everything into one side of a tortilla shell and shred some cheeeeese over it. (i put A LOT of cheese because i just love it. you can never have enough cheese.)


then fold those puppies over and toss them in a pan! don't forget to throw a little cooking spray on there first or else they will stick and you will swear a lot. not that i know anything about that.

i know what you're thinking, "i thought you said you just live with your boyfriend, not a small country"; and to that i would answer "shut up. we are hungry people."


once they've been on the heat (med. high) for a few minutes, start checking the bottom for desired crispiness. and if you have a small crappy stove like i do you might want to keep an eye on them in case one side of the pan cooks faster than the other because there is only have one big burner so the pan on the smaller on needs to be rotated during cooking as a result... i'm out of breath. long story short: i hate my stove.


if you've never made quesadillas before you might find flipping them a little tricky (meaning the "insides" might spill out a bit) but everything will still be edible and practice makes perfect.


when they are lightly browned on each side get them on a cutting board and let them cool for just about a minute.



then cut them (i usually opt for 3's) and slide them on a plate and you can serve salsa and sour cream on the side; or anything else you want for that matter. every aspect of every food can be altered to your liking which is something great about cooking. you can make the same meal over and over but every time it can be different!


if you like spicy stuff you can always toss some hot sauce in it or like the boyfriend does, mix hot sauce in with the sour cream!


and that's how i make my quesadillas!


tip of the day:

when i cut up my vegetables i put them into a bowl or tupperware so that when i'm done i can just cover the leftovers and keep them in the fridge for another meal. my favourite use for these things: omelettes! you can use exactly the same fillers (though i usually just use the veggies and cheese) but it's for a whole new meal!

    I tried your Quesadillas, All I can say it was a BIG Hit. There was 9 of us and I made 20 I think I could of made 10 more they just Loved them. Now I have to try your Banana Bread.
